PREPARATION TIME:

INGREDIENTS:
- 6 dates, finely chopped
- 400 ml/13.5 oz coconut cream (1 can)
- 1/2 cup chia seeds
- 2 tablespoons raw cacao powder
- 2 tablespoons cacao nibs
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
1 to 2 pinches cayenne pepper
To serve: fresh raspberries, blackberries, cinnamon, cayenne and cacao nibs
PREPARATION:
Soak the dates in boiling water for 5 minutes to soften. Once softened, drain the water.
Place the dates, coconut cream, raw cacao powder, cinnamon, vanilla, and cayenne pepper in a blender and blend until smooth.
Pour the mixture into a sealable container, add the chia seeds, and whisk them into the mixture. Leave for five minutes, and then whisk again to ensure no clumps. Then, add the cacao nibs for crunch, and leave them for a few hours or overnight in the fridge to set.
To serve, scoop the pudding into dessert glasses and top with fresh raspberries and blackberries for extra epicatechins and catechins, then sprinkle on a little cinnamon and cayenne for color and a few cacao nibs for crunch.
