Before OCULTO, Carmen founded El Arrayán, a celebrated Puerto Vallarta restaurant that for 17 years delighted locals and visitors with its innovative yet authentic take on Mexican dishes. El Arrayán became a cornerstone of the local dining scene and a must-visit for food lovers.

Carmen’s expertise is grounded in her education at Les Roches International School of Hospitality Management in Switzerland and her Diploma in Mexican Culinary Traditions from the ENAH National School of Anthropology and History. With her team’s support, Carmen continues to share the heritage of Mexican cuisine, offering memorable experiences that celebrate Mexico’s rich culinary culture.
